Lots of color, lots of flavor! We had our favorite beet dish for the first time in a while…goat cheese, roasted beets and almonds (supposed to be candied pecans). So good

Description

We grow a few different varieties. Chioggia are candy cane striped inside, Touchstone are golden, and Dertroit Dark are deep purple. ¬†We’ll pick what looks best. The greens are great sauteed with butter, white wine, and garlic – just as you would cook swiss chard.

 

Bunches of cute little beets. They should size up as we start picking. They’re a delicacy when small…no need to cut (halve if you must) or peel, just scrub, roast and serve! I left them in for an hour at 400. Candy sweet!
